Title: Kletsky- Apple Dumplings #002

4 Apples, medium, peeled cored finely chopped
6tbLemon juice fresh
2tbLemon rind grated
1/2cSugar
2 Eggs beatne lightly
1 1/2cFine berad crumbs

Pour lemon juice over the apples then squeezed them dry. Mix the lemon rind into the apples, sugar, egg, & bread crumbs. Chil in refrigerator for 30 minutes. remove from refrigerator and make walnut-sized balls. In a large pot of lightly, salted, boiling water drop the balls. Boil until they rise to the surface. Use a slotted spoon to remove them from the boiling water. Allow them to drain and cool to room temperature. These dumplings may be eaten dusted with powdered sugar, added to a fruit soup, or "as-is" as you desire. Origin: Tatiana Belosov, Rostov-On-The Don, Russia, Circa 1995
